FRACTIONAL CFO · OUTSOURCED CONTROLLER · BOOKEEPING
Serious about your numbers.
Not so serious about everything else.
Finance and accounting for restaurants, bars, and growing business across Texas—from an advisor who actually knows the industry, and actually picks up the phone.
WHAT WE DO
More than bookkeeping
We’re the financial partner most small businesses can’t afford to hire full-time — controller and CFO-level thinking, without the full-time price tag.
-

Outsourced CFO & Controller
A trusted, unbiased advisor for evaluating new opportunities, business models, and revenue streams — the strategic financial leadership of a CFO, without the full-time cost.
-

Prime and Cost Control
Challenges existing assumptions to uncover savings, then implements controls to manage labor costs, product costs, and cash flow — especially critical in restaurants and bars.
-

Bookkeeping & Financial Reporting
Timely, organized, and accurate record keeping — the foundation for understanding your business, improving it, and reporting back to investors and owners.
-

Budgeting & Forecasting
Works with ownership to build a financial roadmap, aligning operations with realistic projections.
-

Payroll & Benefits Administration
Runs payroll and manages insurance deductions. Ed connects clients with employee health insurance options — a benefit that's helped multiple restaurant clients attract and retain good staff.
-

Tax-Ready Partnership
Bald Ginger keeps your books clean and organized all year, then works with strong tax accounting partners so you can hand off everything you need at tax time without the scramble.
-

Performance Analysis
Identifies the key performance indicators that matter and turns them into clear, usable reporting so owners and key staff can gauge the health of the business day to day.
-

Banking, Lending & Financing
Strong local banking relationships to secure financing and the right banking arrangements. Ed also maintains relationships in the commercial real estate space to support clients as they grow or relocate.
Your books are closed. The numbers are on your phone.
NEW · CLIENT PORTAL
You run your business from the floor, not a desk. Once we close your books, your numbers go straight to your phone — sales, food cost, prime cost, and labor — with month-over-month and year-over-year comparisons built in. Made for people who run restaurants, not people who stare at spreadsheets. Just your numbers, the moment they're ready.

Ed Hattrup
FOUNDER & FRACTIONAL CFO
Ed is the Bald Ginger. A fractional CFO and outsourced controller with 12+ years of experience, he helps restaurants, bars, and growing businesses understand what their numbers are actually telling them — and what to do about it. He builds budgets, tightens financial controls, and gives owners a real-time read on their business, so decisions get made on facts instead of guesswork. He's also not your typical accountant: approachable, genuinely available, and as comfortable talking food and wine as he is a P&L. Catch him watching Premier League soccer at a client's bar or pulling for his alma mater, Notre Dame — though, fair warning, he's never really off the clock.
-

Jennifer Mills, CPA
SENIOR CONTROLLER
A University of Texas at Austin grad, Jennifer earned her CPA early in a career that's now spanned 30+ years across real estate, IT, manufacturing, radio/television/film, CPG, and — most relevant here — food and hospitality. She's found her sweet spot as a fractional Chief Money Maestro. Just don't ask her to do taxes.Off the clock, Jennifer's an Austinite, a wine aficionado, and an Italian food enthusiast still hunting for a spot that rivals The Hill in St. Louis, her hometown. When she's not counting beans, she's at a live show, Zach Theatre, or cheering on the Longhorns — usually with her husband Brent, kids Brandon and Carly, and Sadie, the 11-year-old Goldendoodle who never got the memo she's not a puppy.
-

Jen Crane, CPA
SENIOR CONTROLLER
Jen has spent 30+ years as a CFO and Finance Director for a variety of high-growth companies, steering everything from private-equity deals to SEC filings and M&A work — but she's most at home in the small details that keep a small business running. A UT Austin grad who earned her CPA early, Jen goes all the way back to those same college days with fellow controller Jennifer Mills — still friends, now teammates.Away from the numbers, Jen's an Austinite who's either sipping a glass of wine by the pool or out on an early hike or run, beating the Texas heat before it kicks in. She shares it all with her husband, son Easton, and Auggie the rescued poodle mix — with the occasional cameo from her college-aged daughter Emily.
-

Lydia Hattrup, MBA
DIRECTOR OF OPERATIONS
Lydia keeps Bald Ginger running — leading marketing, operations, and the day-to-day project management that keeps clients well served. A resourceful leader who's built go-to-market practices and high-performing marketing engines for fast-growing companies, she's the one aligning people, projects, and priorities behind the scenes — and the founder's most trusted sounding board (it helps that the founder is her husband). She rounds out the firm's third UT Austin degree (an MBA, for the record). Ed swears her home-crafted gin martinis are hard to beat, but she'll take tequila and nachos any day. Together she and Ed are raising daughter Stella, son Julian, and two French bulldogs, Luna and Tango.
